以分析技术为核心重构“食品理化检验”课程教学体系的探索与实践

要:针对高职“食品理化检验”课程在传统教学中存在的教学内容重复、缺乏系统性与递进性、难以形成完整的技能链条等问题,该文进行了以分析技术为核心的课程教学体系的探索与实践。通过重构“食品理化检验”课程教学体系,打破传统以食品类别为主线的教学模式,围绕分析技术构建模块化课程体系。实践表明,该体系能有效提升学生的操作熟练度、方法应用能力及岗位适配度,为高职院校“食品理化检验”课程教学改革提供参考。

AbstractIn view of the issues of repetitive teaching contentlack of systematic organization and progressionand difficulty in forming a complete skill chain in traditional teaching of Food Physical and Chemical Inspectioncourse in higher vocational educationthis paper explores and practices a course teaching system centered on analytical technology. Using the restructuring of theFood Physical and Chemical Inspectioncourse teaching systemthis paper emphasizes shifting away from the traditional food-type-centered teaching model and instead advocates building a modular curriculum focused on analytical technology. Practice has shown that this system effectively enhances studentsoperational proficiencymethod application skillsand job adaptabilityproviding a valuable reference for teaching reform inFood Physical and Chemical Inspectioncourses in higher vocational institutions.
